So I made couscous today. That's easy, just boil water, add the couscous and let sit. BUT then class was starting and I didn't get the chance to eat it. When I came back, delicious smells were wafting through my apartment. Someone was cooking something delicious. "My couscous needs a delicious sauce!" Said my stomach and tastebuds, wanting to be satisfied. So, I went online for couscous recipes. I finally settled on a fried couscous salad, but I didn't have any ricotta salata, cucumber, tomatoes, parmesan, or basil. So....I started adding things on whim. The "dressing" was too tangy/sour, so I added some tuna. Then came mayo, to help make it less dry. Then came cheddar cheese. I'd love to play around with white cheeses or maybe even cassarole cooking it with cottage cheese or something. At the end, I added some relish for the lack of vegetable crunch and dill spice. Overall, I think it would be better with a vegetable or two. But I like it for now. It has an interesting array of tastes. :)
Couscous-Tuna Salad
COOK 1 cup of dried couscous
FRY 1/4 c. olive oil and 2 cloves of garlic on med. heat until golden
SEPARATE out garlic, throw away
MIX fluffed couscous and oil
FRY on high heat for 6 mins, stirring constantly
FRY 25ish more mins, stirring every 5 mins or so (until all is fried)
MIX with dressing (1/4 c. olive oil, 1.5(??) tbsp lemon juice, 1/4 tsp pepper, 1/2 tsp salt, thyme)
MIX in a can of drained tuna, 2 handfuls of grated cheddar, 2ish tbsps of dill relish, and 1/4ish c. mayo
EAT.
