So what do you do when you have mushy bananas that need used up? BANANA BREAD! But I thought'd I try a more bread-y recipe this time instead of the normal loaf.......
Sweet Banana Bread
COMBINE 2 cups of flour and 4.5 tsp of yeast
HEAT 3/4 cup milk, 1/2 cup sugar and butter, and a tsp of salt
ADD liquids to flour mixture along with 2 mushed bananas, 1 egg, and 1 egg yolk
MIX together.
STIR in as much flour as you can with a spoon
KNEAD in enough flour to make a moderately stiff dough (6 cups total)
SHAPE into a ball, turn once in a greased bowl, and let rise for an hour
PUNCH down, divide it in half, and let rest 10 min
SHAPE into two balls, place on a greased cookie sheet
FLATTEN slightly 6-7 diameters.
BRUSH tops with egg whites, let rise till double (30 mins)
BAKE in 325 oven 35-40 mins
I cut one loaf in half and it smells horrid!
But, it's pretty edible. I put butter and cinnamon sugar on a slice and it was quite tasty!
