So, I haven't had much time to cook with everything going on. However, today an opportunity presented itself! Last night, Jeff and I had warmed up a Hornell Roast thing.....I forget which kind. I cooked up some potatoes and carrots to go in it and it was nummy. To use the leftovers, we mixed it up with rice and some scrambled eggs leftover from the morning. I cooked the rice with bouillon cubes instead of just water and then fried it in bacon grease. That was delicious enough! But then I tossed in the eggs and the meat with all it's juice/gravy and fried that up together. There was a whole ton of it--but so delicious no leftovers remain. Just warm full stomachs. :)

Lasagna Soup
I checked out several lasagna soup recipes and adapted them to my I-refuse-to-go-to-the-store criteria. Here's what I came up with:
Cut up 1/2 an onion and a clove of garlic
Saute them along with your meat (I used some precooked sausage and bacon grease)
Add broth (I used 2 cups of water and a chicken and a beef bullion cube)
Add tomatoes (I used a can of "Italian Style stewed" and chopped up a fresh one)
Add seasonings (2 bay leaves, 2 tsp oregano, a dash or two of garlic salt and pepper)
Heat to a boil
Stir in pasta (I had probably a good.......4 cups of leftover mac'n cheese)
Boil until pasta is tender or heated.
NOM
And ta-da! With the ingredients that I used, it didn't taste too much like lasagna. However, with ground beef and an 8oz can of tomato paste added, I could see it working just fine. To serve it in real lasagna-style, the recipes have you add a dolop/serve the soup on top of a mixture of cottage cheese/ricotta and parmesan/mozzarella. I can see that being delicious!

Potato Soup
What do you do when you don't want to go to the store, but you want to use up potatoes that are going bad and other scrapings of the cupboard? You make soup! I was going between a simplistic recipe that was basically "boil potatoes in water, then add milk, salt, and pepper. Heat until warm" and a much more involved potato soup recipe that involved baking the potatoes first, then adding them into the soup last....Confusing. Basically, I started out dicing all the potatoes I wanted to use, a half an onion, one pork sausage, and some garlic. I sauteed the onion and garlic in butter. When they were "limp"/clearish, I added in a cup or so of water and all of the potatoes. I boiled them for maybe......10 minutes, then added in almost 2 cups of milk and the sausage (pre-cooked). That didn't seem to be thickening, so I mixed up some water/flour slurry and added that. Kept it on the heat, stirring it and not letting it boil. I ended up adding some more of the flour slurry, and it eventually thickened up. For taste, I added garlic salt and.....some random things. A little dry mustard, paprika. Maybe some basil and parsley. What really was a good idea that I added was a little dill.
The dill taste really stood out in the end, I liked what it did. Maybe because I heated it too long trying to get the soup to thicken, but the meat seemed to have very little taste. I wish that it had more flavor to it. I liked the taste it added to the soup, but I wished the chunks had more. My mother gave me a thought--don't start out with water, but a broth! That would probably add a lot of overall flavor. Bacon would also go well in this. ^^ And maybe some celery? Oh! I served it with some grated cheese on top. Might be fun to stir in a cup or so before serving.

Random Soup
I made delicious soup today! I started with a base of beef bouillon, then threw in some onion, carrot, and potato. For meat, I cut up two hotdogs. With some leafy spices like....ummn. What did I use? A little basil, parsley, a smidgen of paprika. Maybe some oregano. Boiled it all together......delicious. A bit....loose? Maybe something to give it a little more body? I'll look into this. Oh! Bits of seaweed, like in miso? Would be amazing!
As it was, I made some herb-y rice to go with it. Rice, butter, spices, a half splash of soy sauce, and garlic salt!

Meaty Mac'n Cheese
Jeff came up this weekend and made me a delicious! We made two FAMILY SIZED boxes of Kraft Mac'n Cheese. (This is not too easy. It FILLED up my biggest pot!) While I was making that happen and practicing my amazing mixing skillz, Jeff was creating a pile of delicious MEAT. He browned up a pound of ground beef in a bunch of bacon grease, cut up 3 hotdogs, and tore one piece of bacon (all that remained from that morning). Then we took our bowls and mixed up some deliciousness.

Salmon Fillets and Herb Rice
So this morning I got it into my head that I needed to cook the salmon before Jeff left (why would I cook it just for me?). I'd bought some at the market on Saturday. I looked up a few recipes, ran to the store for a few things, and voila! Delicious! As a side, I made some herb and butter rice. Sooooooo full but yummy.
To make the salmon, I greased a baking pan and put the fillets in it. Then I mixed up a sauce--3 tbsps each of butter and lemon juice, 1 and a little tbsps of fresh dill paste stuff, 1 tbsp of sour cream, and a bit of minced garlic--and poured that over the fillets. Added a little pepper, covered it in foil, and baked for 20 mins at 375. It was great! Jeff thought it was a bit too lemony, but I liked it. More of a sour cream base would be interesting; that tasted really good with the dill.

Brown Rice Soup
So today? Definitely caught the cooking bug. I snuck into the community garden and picked some chives and basil--did you know basil grows on TREES?! I didn't. Well, it might be a tree-like shrub, I'm unsure at this juncture. Also, I picked a baggie of blackberries.....Should figure out something delicious to do with them that's not "drown in sugar" or tarts. XP Sick of making tarts. Another pastry, perhaps?
But back to tonight! I was suddenly in a soup mood, so I asked my mommy what kind of soup had chives in it (member? I picked them!). She suggested wild rice and gave me some vague instructions(this all through texting). SO! I attempted to make some wild rice soup......using brown rice.....and making ingredients up. I'm glad I had a few vegetables in the fridge. I should buy some more this Saturday at the market, perhaps.
Cooking word I learned today:
Roux--Wikipedia describes it as a base for a kind of French sauce, a mix of fat and butter. Apparently, if you let the soup boil, it can "break." I assume that makes it less of a thickening agent.
I cooked up the brown rice. Interesting thing, I'm horrible at cooking brown rice, but I found these directions that said to mix 1 c. rice to 1.5 c. water, bring to a boil, then put the lid on and simmer. After 20 mins, uncover it and let it sit. It actually worked pretty well! I was worried because there seemed to still be a lot of liquid left when I got to the "turn off the heat and let it sit" part. But ta-da!
I pan-fried the chicken, cut it into bits (I do this in the pan while it's cooking. Keeps me occupied 'cause otherwise I get bored), and set it aside. I made up chicken broth from bouillon cubes and chopped things up. I'm out of butter, so I used delicious bacon grease (that is delicious) to saute some onion, carrots, garlic, and celery. Then I mixed in the flour to soak up the extra grease (the roux!). This took a lot of stirring. Then I added in the chicken broth, brought it to a simmer and kept it there as I added the rice, chicken, a dash or three of dry mustard, and my chives(!!!!). I mixed it up CAREFULLY. My frying pan was very, very full. Then let it simmer for 25 mins, then added some milk. Now it's simmering for another 20 minutes.
It had developed a kind of crust on the top and the bottom, so I stirred it up when I mixed in the milk. It tasted very much of onions and salt before and after adding the milk it tastes more creamy and less chicken-brothy. Maybe next time I'll try it without. However, it was almost too salty before the milk. Using bacon grease and having three vegetables from the onion family probably didn't help. Maybe use butter next time, or less milk. I think bacon bits in it would be amazing. I'll see how it turns out. Oh! I should make bread to go with it!

English Muffin Cheesey Melt
So....getting a little adventurous. I'm hungry for food, but not in a want-to-cook sort of way. I don't like cooking just for myself--where's the motivation. So here's what I just tried:
TOASTED an english muffin
SPREAD each side with cottage cheese
ADDED deli meat and cheddar cheese slices on top
MICROWAVED it for 1 minute
The result?
A melty, VERY cheese openfaced sandwich type thing. Surprisingly good! I think I want more meat next time, though. That's a lot of cheese.....

Chicken Spaghetti (Lemony)
I've been in a horrible pasta-craving mood. Well, that and seafood. But, haven't had the means to get seafood, so PASTA!
I cooked a bunch of spaghetti. I have some sort of discount healthy stuff, but it's all delicious. I was just going to make plain old, easy spaghetti:
COOK noodles
ADD sauce
MIX together
EAT
However, the cheating pasta sauce pouch I was planning on using was, upon closer inspection, way past its prime. With the noodles already cooked, what was a girl to do? Well, no fear! A lone can of tomato sauce was magically in the cupboard. I FRIED up some chicken breasts and CUT them into little pieces, SAUTEED a clove of garlic, POURED in the can of sauce, ADDED random amounts of oregano, basil, parsley, a splash of paprika, and too much lemon juice, and simmered before ADDING it all together. It was really good, but you could definitely taste that lemon. I think it'd be fun to try again with less lemon. But I did like the zing, so I won't be taking it out completely. Yay for random made up deliciousness! This is why pasta's so great. Cook pasta, add a sauce, eat. What could be simpler? ^^

Banana Pancakes-Oops
So.....tonight, I tried something not so good. I wanted to make banana pancakes---there randomly appeared bananas in my room! No one claims to have bought them. Weird, eh? Anyhows. Pancakes. So I looked up a pancake recipe, easy enough. Then I decided to add vanilla and cinnamon. The usual, ya know? But adding those gave me the thought.....what if I added nutmeg? Nutmeg and bananas go together, right? >.<; Well, they may, but I either shouldn't have put it in or put too much because yikes! the batter tasted spicy! I added some white and brown sugar to cover it up. The result was.......edible. But the after taste, not so good. Bad random addition on my part. Jeff deemed them edible, but we shall not be trying those again. >.< Therefore, no recipe......

Garbage Egg Flower Soup
This was pretty delicious! It started with an urge to eat potatoes, but to make something more out of them.
Garbage Egg Flower Soup
BOIL 3 cups of water
ADD 3 bullion cubes (1 chicken, 2 beef)
ADD chunks of potato
while that's boiling, CUT up a carrot and a stalk or two of celery
When the potatoes are mostly tender
ADD rest of vegetables
When they reach an acceptable tenderness
REMOVE from heat and immediately
POUR in 2 eggs, beaten
STIR right away
ADD soy sauce, pepper to taste
It is full of delicious noms! I personally like to leave things a little crunchy. Yay combo'd textures in soup! This made a large bath for two very hungry people.
This could be yum with added meat and/or noodles as well.....
Carne Asada
So twas Jeff's turn for dinner. He enlisted the help of fellow Kitchen Boy Larry(who chefs--cheater) to make these taco-things. "Carne-Asada" Basically meaty roast meat with parsley, onions, and sour cream. It was pretty good-I don't really like eating raw onions. I added some shredded mozzarella cheese on top to take down on the bite. It was pretty nom after that. :)

French Toast

BEAT together 4 eggs, 1 c. milk, 2 tbsp. sugar, 2 tsp vanilla,
MIX/BEAT in 1/2 tsp. cinnamon and 1/4 tsp. nutmeg
DIP bread into mixture
FRY bread
I have a terrible time frying bread in my frying pan. XP So, Kitchen Boy was good enough to take over that bit for me. :) Other than that, it is simple, delicious. I used Killer Dave's bread, which is full of seeds and things. It wasn't stale, so the final thing turned out slightly soggy. I feel like if the bread was toasted or a bit stale, it wouldn't have that problem.

Fettuccine alla Carbonara
Okay. This was a pain to make. Kitchen Boy cooked the bacon, and I was trying to do everything else. NOT a good idea. I completely messed up the sauce on my first try with our last egg. DX I had to run to the store (literally) and buy some more. Try to get all the ingredients taken care of first, is my thought. Do the bacon cooking before hand. Then the other person can cook the noodles while you're dealing with the sauce? Or perhaps cook the noodles before, too and just let them sit in the water to keep them warm? Dunno.....
Fettuccine alla Carbonara
COOK and CUT up 6-8 slices of bacon
COOK and maybe DRAIN 6 oz dried fettuccine
COMBINE in a saucepan 1 beaten egg, 1 c. milk, and 2 tbsp. butter
COOK and STIR over med/low heat until it coats a spoon (about 6 mins)--DO NOT LET IT BOIL (this will cook the egg out of the milk and it will be lumpy and gross and not sauce at all!)
COMBINE sauce and pasta
STIR IN bacon, 1/2 c. grated cheese
Add parsley, pepper, garlic salt to taste/as needed
Once you get the hang of the rhythm of cooking this, it isn't very hard and it IS delicious. I have made it several times before with a different partner. This was my first time doing the directing/sauce making. How did he ever do the sauce so well?! Maybe someday I'll be able to, too. This would also taste good with chicken bits. >.>

Spinach Quiche

Spinach Quiche
SPRINKLE some cheese on the bottom of the crust
BAKE at 400F for 5 mins
SHRED 1 1/4 c. cheddar cheese
FRY and CRUMBLE bacon
Finely CHOP 1/4 c. onion
COOK and DRAIN one 10-oz package of chopped spinach
BEAT together 4 eggs, 1 c. milk, 1 c. cheese, onion, bacon, 1/2 tsp. dry mustard, 1/2 tsp. salt, and 1/4 tsp. paprika
ADD spinach
POUR into pie shell (watch out for overflow!)
SPRINKLE with remaining cheese
BAKE at 400F for 40 mins
This turned out wonderfully. I was worried about it being runny or something because it overflowed at the beginning, but it turned out great! We used 6ish strips of bacon and a little extra cheese. That may have been why it was over flow-y. The original recipe called for 4. Then again, the original recipe also called for 2 cups of milk. That would have REALLY soaked everything. O.o The pie crust pre-cooking was a good idea, I think. I threw it in the oven just after it was done preheating when I was draining/adding the spinach. That timing worked rather well. I bought uncooked crust at the store, but I'm sure crust made from scratch would work just fine.....

Tater Tot Casserole
Tater tot casserole is one of the most delicious things! I couldn't get a picture of it finished, though. We were too busy eating it! XD
Tater Tot Casserole
THAW 1 lb of ground beef
DICE most of an onion and a clove of garlic
MIX all together
ADD spices, like thyme and pepper
MUSH into the bottom of a pan
POUR 1 can of concentrated cream of mushroom soup over top
COVER the top with rows of tater tots
COOK in 350F oven for 1 hour
NOM!

Cheesy Bread and Egg Sandwiches
So, my Kitchen Boy decided to make some cheap deliciousness for me tonight! The first course was oven-melted cheesy bread.
Cheesey Bread
OPEN hamburger buns
SPRINKLE cheese on as desired
PLACE in a hot oven
CHECK for melted cheese
REMOVE and NOM
And the second course was egg sandwiches. I was a little skeptic about this one, but it was actually really good! I'm glad I can eat eggs nowadays.

WHISK them together a bit with a fork
FRY them in a pan
meanwhile.....
Lightly TOAST garbage white bread
SPREAD mayonnaise on the insides
then....
PLACE the egg between the breads
NOM
Trust me, white garbage bread makes this taste DELECTABLE. I'm sure you could use other bread, though.
Alternatively, in my family we always used ketchup instead of mayo and actually scrambled the egg. This leaving it flat thing makes this version a lot easier to eat, however!
Great for any meal.

Brownie Cake
I made delicious brownie cake for my mother's birthday! I was worried it might be too chocolatey/sweet but it was noms all the way. ^^

DRIZZLE with a jar of caramel
I used round cake pans but you could make a square cake. I also went the easy way and used box brownies! My mother and I thought that it would taste even better if a layer of ice cream were added. That would also keep it cool enough so that the caramel might stay put better.

So, I need to get better at posting stuff. I probably wont, but why not capitalize on the motivation why it's still there? Plus, I don't want to work on my essays. XP This morning I got up and made scrambled eggs! Should I really post a recipe? Probably not, but I guess that I'll follow the example of my other posts:

Black Bean Soup
So, the original plan was to use up my potatoes and celery and maybe use some type of broth and maybe turn it into an odd type of egg drop soup. But, then I found my beans. Looking up recipies, I found a soup that I thought I could make......funnily enough, I didn't realize till a bit through that I was missing a couple ingredients! But, that's alright. I like the lemon/salt flavor that came out. Apparently, black bean soups are typically spicy? I wouldn't have liked that anyways. Here it is!
Black Bean Soup
SIMMER together 2 minced garlic cloves, 2 finely chopped celery ribs, 2 chicken bouillon cubes, and 1.5 cups water for 10 minutes.
ADD 1/2 can of black beans and 1/2 tsp salt.
COOK for 5 minutes.
REMOVE from burner and use the bottom of a cup or something to SMASH, CRUSH, and otherwise SMOOSH the soup.
RETURN to burner.
ADD the rest of the can of beans and another whole can.
COMBINE 1.5 tbsp cornstarch with 1.5 tbsp water
ADD cornstarch mixture and 1.5 tbsp lemon juice to soup
COOK until thickens.

I think carrots would taste good in this--the lemon is a little strong, but might compliment well.
There are some ingredients I left out, an onion, cumin, pepper. They may improve it......but I like the non-spicy.
Black Bean Soup
SIMMER together 2 minced garlic cloves, 2 finely chopped celery ribs, 2 chicken bouillon cubes, and 1.5 cups water for 10 minutes.
ADD 1/2 can of black beans and 1/2 tsp salt.
COOK for 5 minutes.
REMOVE from burner and use the bottom of a cup or something to SMASH, CRUSH, and otherwise SMOOSH the soup.
RETURN to burner.
ADD the rest of the can of beans and another whole can.
COMBINE 1.5 tbsp cornstarch with 1.5 tbsp water
ADD cornstarch mixture and 1.5 tbsp lemon juice to soup
COOK until thickens.

Couscous-Tuna Salad
So I made couscous today. That's easy, just boil water, add the couscous and let sit. BUT then class was starting and I didn't get the chance to eat it. When I came back, delicious smells were wafting through my apartment. Someone was cooking something delicious. "My couscous needs a delicious sauce!" Said my stomach and tastebuds, wanting to be satisfied. So, I went online for couscous recipes. I finally settled on a fried couscous salad, but I didn't have any ricotta salata, cucumber, tomatoes, parmesan, or basil. So....I started adding things on whim. The "dressing" was too tangy/sour, so I added some tuna. Then came mayo, to help make it less dry. Then came cheddar cheese. I'd love to play around with white cheeses or maybe even cassarole cooking it with cottage cheese or something. At the end, I added some relish for the lack of vegetable crunch and dill spice. Overall, I think it would be better with a vegetable or two. But I like it for now. It has an interesting array of tastes. :)
Couscous-Tuna Salad
COOK 1 cup of dried couscous
FRY 1/4 c. olive oil and 2 cloves of garlic on med. heat until golden
SEPARATE out garlic, throw away
MIX fluffed couscous and oil
FRY on high heat for 6 mins, stirring constantly
FRY 25ish more mins, stirring every 5 mins or so (until all is fried)
MIX with dressing (1/4 c. olive oil, 1.5(??) tbsp lemon juice, 1/4 tsp pepper, 1/2 tsp salt, thyme)
MIX in a can of drained tuna, 2 handfuls of grated cheddar, 2ish tbsps of dill relish, and 1/4ish c. mayo
EAT.

Vegetables in Cream Sauce
Nomnom! I came upon this recipe looking for dinner ideas in my electric skillet cookbook. I have a bag of frozen veggies, so it worked out. :)
Vegetables in Cream Sauce
MELT 2 tbsp of butter
STIR in 1/2 tbsp of flour
ADD 1/2 c of milk slowly, stirring constantly
ADD 1/4 package of cold, but mostly thawed frozen vegetables
STIR until done.
I added a pinch of pepper and two pinches of garlic salt. The recipe suggests adding a beat egg white to the sauce as well.
This recipe was fairly fast and tastes pretty good. Thumbs up!

COOK 1/2 c of dried rice (I think)
THAW 1/2 package of vegetables
SCRAMBLE 1 egg, set aside
HEAT 2 tbsp of vegetable oil and 2 tbsp soy sauce
STIR in thawed veggies
when almost done
ADD eggs, 1 tbsp soy sauce, and rice
STIR about for another minute or so

Tuna Melt
What do you eat for lunch when you don't know what to eat, but have been told by the nutrition prof to eat more fish? Hmmmn.....how 'bout a....
Tuna Melt
MIX up tuna like ya would your sandwich
-1 can tuna, 1/2 c shredded spinach, 2 tbsp mayo, 2 tbsp DILL relish
PILE on top of bread
GRATE delicious cheese of your choice on top
PLACE on a cookie sheet
HEAT oven to a temp, I used 250
COOK until all the cheese is melted, or browned, or whatever your preference!
This was pretty fast and easy. Quite a filling lunch.

Bread
I was out of bread, but still didn't have any money to buy some......solution? Make some!

KNEAD dough 10 min
COVER till doubled
PUNCH down dough and
DIVIDE into two
PLACE on greased loaf pans
COVER till doubled
BAKE in 375 oven 25-30 mins
The punching down bit is fun. ^_^ I think it works best if you combine the dry and wet ingredients separately, THEN combine them. And start activating the yeast with some of the water and add it last. Add, say.....1.5 cups of flour with the "dry" ingredients. Add as much as you can stir in with a spoon (I don't have a mixer!) and then knead the rest/as much as makes a good stiff dough.
Now, I think my yeast is getting a bit old 'cause I had trouble with the rising and it turned out a bit dense. BUT! It tastes delicious and is bread. :)

Strawberry Strudel

Strawberry Strudel
RINSE and wash strawberries
Slice them up
MIX with sugar and cornstarch
UNFOLD phylo dough
SPREAD out a layer of strawberries
BUTTER the edges
FOLD in two opposite edges
ROLL to cover the rest
FORK down the seam and place seam-down on a cookie sheet
SLIT the top, butter it, and sprinkle with sugar
BAKE for 25-30 minutes at 350

They were not so dry, but the ends were a little too dough-filled. Maybe roll less? But it was a great way to create some layers without actually having to worry about layers.
The phylo dough itself was a little chewy. I wonder if it was the dough or how we cooked it? This is something that needs to be experimented with.

SPREAD pizza sauce on top
COVER with toppings
PLACE on a cookie sheet and into the oven
BAKE until cheese is melted
I like 4 pieces of pepperoni covered in whatever cheese is around. Easy and delicious! Usually, I bake it somewhere between 200 and 350. Takes around 10-15 minutes. You can use sauce other than pizza sauce, but it doesn't taste near as good. XP

Sweet Banana Bread
So what do you do when you have mushy bananas that need used up? BANANA BREAD! But I thought'd I try a more bread-y recipe this time instead of the normal loaf.......
Sweet Banana Bread
COMBINE 2 cups of flour and 4.5 tsp of yeast
HEAT 3/4 cup milk, 1/2 cup sugar and butter, and a tsp of salt
ADD liquids to flour mixture along with 2 mushed bananas, 1 egg, and 1 egg yolk
MIX together.
STIR in as much flour as you can with a spoon
KNEAD in enough flour to make a moderately stiff dough (6 cups total)
SHAPE into a ball, turn once in a greased bowl, and let rise for an hour
PUNCH down, divide it in half, and let rest 10 min
SHAPE into two balls, place on a greased cookie sheet
FLATTEN slightly 6-7 diameters.
BRUSH tops with egg whites, let rise till double (30 mins)
BAKE in 325 oven 35-40 mins
I cut one loaf in half and it smells horrid!
But, it's pretty edible. I put butter and cinnamon sugar on a slice and it was quite tasty!
